Buttermilk-Fried Chicken Sandwich

Buttermilk Marinade

  • buttermilk (2 cups)

  • salt (1 tsp)

  • black pepper (1 tsp)

  • cayenne pepper (1/2 tsp)

  • boneless, skinless chicken thighs (8)

Seasoned Flour

  • all purpose flour (2 cups)

  • salt (1 tbsp)

  • black pepper (2 tsp)

  • cayenne pepper (1 1/2 tsp)

  • garlic powder (1 tbsp)

  • peanut or vegetable oil for frying

Dill Dressing

  • plain Greek yogurt (1 1/2 cup)

  • fresh dill, chopped (3 tbsp)

  • garlic powder (1 tsp)

  • lemon juice (2 tbsp)

  • grated Parmesan cheese (1/4 cup)

For Serving

  • softened butter, for bun

  • brioche burger buns (8)

  • butter lettuce (1 head)

  • tomato, sliced (2)

  1. Make the buttermilk marinade: In a medium bowl, combine the buttermilk, salt, pepper, and cayenne. Toss in the chicken thighs in the marinade to coat. Marinate for at least 1 hour in the refrigerator, or overnight

  2. Make the dill dressing: In a small bowl, combine the yogurt, dill, garlic powder, lemon juice, and Parmesan cheese. Cover and let sit for at least 1 hour in the refrigerator to chill

  3. Make the seasoned flower: In a medium bowl, combine the flour, salt, pepper, cayenne, and garlic powder. Dip the marinated chicken in the flour mixture until the chicken is completely covered

  4. Heat the oil in a deep pot until it reaches 350°F. Do not fill more than halfway with oil. Carefully fry the chicken for 7 minutes, or until cooked through

  5. The internal temperature should reach 165°F, and the chicken should be golden brown and crispy. Drain on a paper towel-lined plate or wire rack

  6. Heat a large skillet over medium heat. Butter the cut sides of the burger buns, then toast on the hot skillet until browned and crisp. Build the sandwiches with the toasted buns, lettuce, fried chicken, tomato slices, and dill dressing

I personally loved this recipe. Despite it taking a little bit of time it was totally worth it! The sauce in my opinion was one of my personal favorite as it added a really tasty flavor to it. I have made this a few times since learning the recipe and it makes for the perfect lunch. Now instead of spending a lot of money on ordering chicken sandwiches you can make your own in your own home!
